Cooking Instructions
1.
Clean and Wash the Basmati Rice (1 cup) till the water runs clear of starch. Soak the rice in enough water for 20-30 mins. Drain it and then add the rice to a pot.
2.
Pour Water (3 cups) in the rice. Add Salt (to taste) and Oil (3 drops). Stir and cover and cook the rice till the rice grains are cooked well.
3.
In a strainer, add the cooked rice and let all the water drain away. Once all the steam has passed from the rice, cover the rice with a lid.
4.
In a pan or kadai, add Oil (1 Tbsp) and Butter (2 Tbsp). Then add Cumin Seeds (as needed) and fry them till they get browned.
5.
Add finely chopped Onion (1) and saute till translucent and add the Ginger Garlic Paste (1 tsp) and saute till the raw aroma goes away.
6.
Now add the Potato (1), Carrot (1), Bell Peppers (2 Tbsp) and Green Peas (1/2 cup). Saute for few minutes and then add Tomatoes (2), stir and add the Ground Turmeric (as needed), Kashmiri Red Chili Powder (as needed), Garam Masala (as needed), Pav Bhaji Masala (as needed) and salt.
7.
Stir again and saute the whole mixture till you see butter releasing from the sides. Now add 1/4 cup of water and close the lid till all veggies cooked and all the masala become dry.
8.
Once all the veggies cooked and water evaporated, then finally add the cooked basmati rice and gently mix the veggies with the rice with very light hands.
9.
Garnish with Fresh Cilantro (to taste) and sprinkle some lemon juice before serving on tava pulao.
