Spinach Salad with Strawberry and Sweet Potato

This fiber-filled salad is very versatile- you can sub the fruit, nuts, and toppings for another preference and it’s still going to be a hit! The sweet potato goodness + dressing is what seals the deal! I’ve yet to find any bottled dressing to compare it to, and it’s much cheaper to make than any store-bought kind.

Salad

Fresh Spinach

•

Large Sweet Potato , cubed

•

2 cups

Fresh Strawberries , sliced

•

1 cup

Fried Onions

•

4 Tbsp

Dried Cranberries

•

4 Tbsp

Chopped Walnuts

Sweet Poppyseed Dressing

•

1/3 cup

Canola Oil

or Vegetable Oil

•

4 Tbsp

Granulated Sugar

•

Lemon , freshly squeezed

•

1 tsp

Minced Dried Onion

•

1 tsp

Honey Mustard

•

1 Tbsp

Poppy Seeds

•

1/4 tsp

Cooking Instructions

Cook the Sweet Potato (1) in a microwave oven in a covered casserole dish with 2 inches of water for 6 minutes until soft. Drain and cool slightly before adding to the salad.

Mix Canola Oil (1/3 cup) , Granulated Sugar (4 Tbsp) , juice from Lemon (1) , Minced Dried Onion (1 tsp) , Honey Mustard (1 tsp) , Poppy Seeds (1 Tbsp) , and Salt (1/4 tsp) and set aside.

Add Fresh Spinach (1 pckg) to a large bowl or platter. Add Fresh Strawberries (2 cups) , Fried Onions (1 cup) , Dried Cranberries (4 Tbsp) , and Walnuts (4 Tbsp) . Stir dressing and add just before serving. Enjoy!
