Cooking Instructions
1.
Dice the Red Onion (1/4), Green Bell Pepper (1/2) and Roma Tomato (1). Peel and pit the Avocados (2).

Add the vegetables to the Vitamix in this order: onions, bell peppers, tomatoes, and avocados. Add Salt (1 tsp) and juice from Lemon (1) and blend on variable speed 1 and slowly move to 3 for 15-20 seconds.
3.
Transfer to a bowl and serve with chips. Enjoy!
Author's Notes
When doubling recipe, increase avocados to 4 and increase onion to 1/2 cup (80 g).
