Cooking Instructions

In a large bowl, using a potato masher or large whisk, coarsely smash most of the Chickpeas (2 cans).

Add the Celery (2 stalks), Scallions (1/4 cup), Mayonnaise (1/4 cup), and 3 Tbsp of Lemon (1) to the chickpeas and mix well. Season generously with Sea Salt (to taste) and Ground Black Pepper (to taste). Stir in the Fresh Chives (1/4 cup) and the Fresh Parsley (1/2 cup).
