Beets , grated

Fresh Baby Spinach

Red Cabbage , sliced

Carrots , grated

1 bunch

Radishes , chopped

Celery , sliced

1 cup

Almonds

•

1/2 cup

Sunflower Seeds

1/2 cup

Coconut Shavings

Honey Mustard Dressing

•

3 Tbsp

Olive Oil

•

1 tsp

Apple Cider Vinegar

•

1 Tbsp

Honey

•

Lemon , juiced

•

1 tsp

Whole Grain Mustard

•

to taste

Salt

•

to taste

Ground Black Pepper

Cooking Instructions

Wash all fresh produce well. Place Beets (2 1/2 cups) , Fresh Baby Spinach (2 cups) , Red Cabbage (1 cup) , Carrots (1 cup) , Radishes (1 bunch) , and Celery (1/2 cup) in a large salad bowl with the Almonds (1 cup) , Sunflower Seeds (1/2 cup) , and Coconut Shavings (1/2 cup) .

Place Olive Oil (3 Tbsp) , Apple Cider Vinegar (1 tsp) , Honey (1 Tbsp) , the juice from Lemon (1) , Whole Grain Mustard (1 tsp) , Salt (to taste) , and Ground Black Pepper (to taste) in a small bowl and mix well until it comes together.

Pour dressing over salad and toss.
