Strawberry Chia Seed Jam

Fresh Strawberries , quartered

Lemon , juiced

Corn Starch

Salt

Vanilla Essence

Cooking Instructions

In a medium saucepan over medium-high heat, stir together the Fresh Strawberries (4 cups) , juice of the Lemon (1/2) , Corn Starch (2 tsp) , and Salt (1 pinch) , stirring until the cornstarch dissolves.

Bring to the boil, stirring constantly. Stir in the Water (1/3 cup) . Cover and simmer on a medium-low heat for 10 minutes.

If you want a smooth jam, mash the strawberries with a potato masher until you are happy with the consistency. If you want a chunky jam, don’t mash them at all. Simmer uncovered for another 5 minutes, or until the mixture is thickening.

Take the jam off the heat and stir in the Vanilla Essence (1 tsp) , Honey (3 Tbsp) , and Chia Seeds (2 Tbsp) , making sure the seeds are evenly distributed. Let the jam cool for 5 minutes.

Pour the jam into glass jars with airtight lids. Store them in the fridge or freezer. Enjoy!
