Sharp Cheddar Cheese
, freshly shredded

Evaporated Milk
, divided

Corn Starch

Hot Sauce
Cooking Instructions

Hand shred the Sharp Cheddar Cheese (2 cups).
2.
In a medium sized bowl, toss cheese with Corn Starch (1 Tbsp). Toss until well coated.
3.
Transfer cheese mixture to medium sauce pan. Add the Evaporated Milk (8 fl oz) and the Hot Sauce (2 tsp). Cook over low heat, stirring constantly.
4.
Continue to cook and stir until cheese is melted. Add the remaining Evaporated Milk (4 fl oz) slowly, stirring until well blended and heated through.
5.
Remove from heat and serve with your favorite cheese-worthy food!
Author's Notes
Whatever you do…shred your own cheese. Store-bought pre-shredded cheese has additives in it to prevent clumping. Those additives plus the corn starch in this recipe will cause it to be grainy instead of smooth.
