Cooking Instructions
1.
Peel the Baby Potatoes (1.1 lb), then place them in a pot and boil until they are very soft.
2.
Next, strain the potatoes, toss them gently in a bowl so that they get little cracks, and set them aside
3.
On a baking tray, sprinkle Olive Oil (3 Tbsp), Garlic (1 bulb), and Fresh Rosemary (to taste).
4.
Add the potatoes onto the tray, season with Salt (to taste) and Ground Black Pepper (to taste) and gently toss them around so they get well coated.
5.
Bake at 350-375 degrees F (180-190 degrees C) for about 40 minutes.
6.
Remove the potatoes from the oven. With a potato masher or the bottom of a small glass, gently smash potatoes into flat patties.
7.
Pop them back into the oven and keep cooking for 10-15 minutes, until they are nice and crispy on the outside but still soft on the inside.
8.
Serve them hot with roasted chicken or turkey.
