Cooking Instructions
1.
Preheat the oven to 350 degrees F (180 degrees C).
2.
In a bowl, whip up Eggland's Best Organic Eggs (Brown) (2) and Coconut Sugar (1/2 cup) with an electric mixer until light in color and foamy.
3.
Whisk in Water (1/3 cup), zest and juice from Oranges (1 1/2).
4.
Last fold in Spelt Flour (1 1/2 cups), cooked and blended Wheat Berries (3/4 cup), Baking Powder (3 tsp), and Salt (1 pinch).
5.
Pour the mixture into an oiled and floured cake pan.
6.
Bake the cake in the preheated oven at 350 degrees F (180 degrees C) for about 40-50 minutes.
7.
Take the cake from the oven and let it cool. Dust with Confectioners Sugar (to taste) before serving.
Author's Notes
The cake recipe fits an 8-inch cake pan.
In a pot boil the wheat berries until softened.
