Cooking Instructions
1.
In a large non-stick skillet, heat Olive Oil (1 tsp) over medium-high heat. Add the Yellow Onion (1) and Green Bell Pepper (1) and cook for 5 minutes.

Stir in Garlic (5 cloves) and cook for 2 minutes. Add in 96/4 Lean Ground Beef (1 lb) and Taco Seasoning (1 packet) and sauté until brown for 7 minutes.

Reduce heat to medium-low, add in Cream Cheese (1/2 cup) and Shredded Mexican Cheese Blend (1 cup) and constantly stir until cheese is melted and thoroughly combined. Remove from heat.

Along one edge of an 8-Inch Corn Tortillas (16), scoop 2-3 tablespoons of the ground beef mixture. Tightly roll up each tortilla and secure it closed by laying it seam down. Repeat “fill and roll” with the remaining tortillas; once all the tortillas are rolled, spray with cooking spray.

Preheat the air fryer to 400 degrees F (200 degrees C). Evenly space out rolled tacos in the air fryer seam down.
6.
Air fry the rolled tacos in batches for 4 minutes. Flip and air fry for an additional 3-4 minutes or until crispy and golden brown.
7.
Arrange the rolled tacos on a serving dish and garnish with Queso Fresco (to taste), Tomatoes (to taste), Shredded Iceberg Lettuce (to taste), Mexican Crema (to taste), or your favorite toppings.
Author's Notes
To warm the tortillas: take 10 tortillas at a time and wrap them in a damp paper towel. Heat them in the microwave for 1 minute. Unwrap and pull tortillas apart, so they don’t stick to one another, then re-wrap them with the paper towel to keep them warm during assembly. Repeat the process once you run out of tortillas.
