Cooking Instructions
1.
In a Dutch oven or deep skillet, over medium-high heat, add Olive Oil (2 Tbsp). Once the oil is hot, add the Garlic (1 tsp) and cook for about 30 seconds while stirring constantly.
2.
Add 85/15 Lean Ground Beef (1 lb) and break it up until it is completely browned.
3.
When cooked through, add the Taco Seasoning (1 Tbsp) and mix in well.
4.
Add the Medium Salsa (1 cup) and stir.
5.
Add the Tomato Paste (2 tsp) and stir until it’s dissolved into the meat.
6.
Add the Chicken Broth (2 1/2 cups), Long Grain White Rice (1 3/4 cups), Canned Corn (1 1/3 cups), GOYA® Black Beans (1 cup), and Salt (1/2 tsp) and stir well.
7.
Lower the heat to medium-low and cover the pot. Cook for 20-25 minutes or until no longer watery.
8.
After 20-25 minutes, add the Scallions (4 Tbsp) and Shredded Mozzarella Cheese (1 pckg). Stir in well.
9.
Sprinkle the other package of Shredded Mozzarella Cheese (1 pckg) evenly over top. Cover for 2 minutes or until cheese is melted over top.
10.
Uncover, sprinkle Fresh Cilantro (to taste) evenly over top, and serve!

Skirt steak doneness guide:
Use a thermometer, if possible. The ideal internal temperature for skirt steak is 130 degrees F (55 degrees C) for rare, 135 degrees F (58 degrees C) for medium-rare, 145 degrees F (63 degrees C) for medium, 150 degrees F (66 degrees C) for medium well and 160 degrees F (72 degrees C) for well done.
