Cooking Instructions
1.
Preheat oven to 400 degrees F (200 degrees C).

Arrange Assorted Color Bell Peppers (3) and Yellow Onions (2) on a parchment-lined sheet tray. Drizzle with olive oil and a pinch of salt.

Bake in the oven for 20 minutes.
4.
Toss the Shrimp (1 lb) with Taco Seasoning (1 Tbsp), Olive Oil (1 Tbsp), and Salt (1/2 tsp).
5.
Add the seasoned shrimp to the same sheet pan, return to the oven and bake for 5 more minutes.
6.
Meanwhile, toast the Flour Tortillas (8) in the oven, or wrap them in a damp paper towel and microwave for 30 seconds.
7.
Serve with Avocado (1), Salsa (to taste), a dollop of Sour Cream (to taste), and a sprinkle of Fresh Cilantro (4 Tbsp).
