Easy Breakfast Muffin Tin Egg Bites

These protein-packed little egg bites are an excellent way to ensure everyone has a decent grab-and-go breakfast or a healthy snack. They will give you sustained energy throughout the morning and are super easy to make. Mix the ingredients, pour them into a muffin tin, and bake! They're also freezer-friendly, so you can make a big batch and have them on hand for those hectic mornings. And best of all, they only require simple ingredients that you probably already have in your kitchen.

Diced Ham

Shredded Cheddar Cheese

Small Tomato , diced

Fresh Baby Spinach , roughly chopped

Cooking Instructions

Preheat the oven to 350 degrees F (180 degrees C).

Spray a 12-well muffin tin with cooking spray.

In a large bowl, whisk the Farmhouse Eggs® Large Brown Eggs (8) with the Shredded Cheddar Cheese (1 cup) , Whole Milk (1/3 cup) , Salt (1/4 tsp) , and Freshly Ground Black Pepper (1 tsp) until combined.

Add the Tomato (1) , Fresh Baby Spinach (1/2 cup) , Ham (1 cup) , and Scallions (1/3 cup) . Stir to combine.

Divide the mixture evenly among the muffin cups, about 1/4 cup in each cup.

Bake for 15-18 minutes, or until they are set, puffed, and lightly golden. They will deflate once removed from the oven, that’s totally normal.

Garnish with more scallions and serve warm.
