This is a typical dish from many countries, and always delicious. There are so many varieties of this dessert that depending on where you are in Spain, it is always going to be different but as you can imagine, my mother's is my absolute favourite.

Cooking Instructions
1.
Into a pot of boiling water, add Arborio Rice (3/4 cup). Cook for 5 minutes.
2.
Drain the rice and rinse with water.

Into the pot, add Milk (4 cups), the skin of the Lemon (1) and the Cinnamon Stick (1). Cook until mixture begins to boil.
4.
Remove the lemon skin and the cinnamon stick. Turn the temperature down to low-medium heat and add the rice in with the milk. Cook for 15 minutes, stirring continuously.
5.
Add Granulated Sugar (1 cup) and Butter (1 Tbsp). Cook for 1 minute, stirring to combine.
6.
Scoop rice pudding into bowls.
7.
Sprinkle Simply Organic Cinnamon, Ground (to taste) over top.
8.
Place pudding in the fridge for 1-2 hours to chill.
9.
Serve and enjoy!
