Not your standard apple cake! This one is made of a first “crunchier” layer followed by a sweet filling of apricot jam, then a soft and moist spongy cake topped with sliced apples.

Cooking Instructions
1.
Preheat oven to 350 degrees F (180 degrees C).
2.
In a large bowl, whisk together the Eggland's Best Organic Eggs (Brown) (4), Coconut Sugar (2/3 cup), and Salt (1 pinch) until light and fluffy.
3.
Slowly add in the Rice Milk (1/3 cup), Coconut Oil (2.5 oz), and Coconut Vinegar (1 tsp) while stirring.
4.
Sift in All-Purpose Flour (1 2/3 cups) and Baking Powder (1 tsp) and stir just enough to mix all the ingredients together.
5.
Grease a springform pan and dust with flour. Pour in half of the batter and bake for about 15 minutes.
6.
Remove cake from the oven and spread the Apricot Jam (1/2 cup) over top. Cover with the remaining half of the batter, then lay the Red Apples (to taste) on top. Bake for another 35-40 minutes.
7.
Remove cake from the oven and allow to cool. Dust with Powdered Confectioners Sugar (to taste).
8.
Serve and enjoy!
