Poached Cod Fillet with Whole-Grain Mustard Sauce and Pomegranate Pilaf

Cod (kabeljau), and especially cod in mustard sauce was a very popular dish in Europe. It was very cheap, tasted great, looked good and was widely available.

Cod Fillets

2 cups

Water

•

Kosher Salt

Ground White Pepper

•

to taste

White Wine

•

2 cups

Heavy Cream

•

1/3 cup

Whole Grain Mustard

•

2 2/3 Tbsp

White Rice

•

1/2 cup

Pomegranate Seeds

•

4 Tbsp

Butter , softened

Cooking Instructions

Cut Cod Fillets (2 lb) into 3 pieces: belly flap, tail part, and front part.

Fill a pan with Water (2 cups) and season with Kosher Salt (to taste) , Ground White Pepper (to taste) , and White Wine (to taste) and let come to a simmer. Steam the fish with the lid on the pan until just cooked through.

Meanwhile, reduce Heavy Cream (2 cups) until slightly thickened.

Add in Whole Grain Mustard (1/3 cup) .

Season with Kosher Salt (to taste) and White Wine (to taste) . If the sauce is too thick, thin it with some of the poaching liquid.

Mix together cooked White Rice (2 2/3 Tbsp) , Pomegranate Seeds (1/2 cup) , and Butter (4 Tbsp) .

Plate the fish and rice.

Cover the fish with the mustard sauce and serve!
