Healthy Coconut No-Bake Cookies

My family’s recipe for the classic childhood cookie made healthier with no refined sugar, and a dairy-free and paleo option too. Yields 15 cookies.

Coconut Milk

1/2 cup

Unsweetened Cocoa Powder

1/2 cup

Coconut Oil

•

1 1/2 cups

Coconut Sugar

2 tsp

Vanilla Extract

Gluten-Free Rolled Oats

Optional Additions

Chopped Almonds

or Walnuts or Pecans

Almond Butter

or Peanut Butter or Cashew Butter

Cooking Instructions

Combine the Coconut Milk (1/2 cup) , Unsweetened Cocoa Powder (1/2 cup) , Coconut Oil (1/2 cup) , and Coconut Sugar (1 1/2 cups) in a larger saucepan.

Cook the mixture over medium-high heat, stirring constantly until it comes to a boil, then boil this mixture for 2 minutes.

Remove the mixture from the heat, whisk in the Vanilla Extract (2 tsp) . Then add the Gluten-Free Rolled Oats (3 cups) .

From here, you can spoon the cookies onto a parchment-lined baking sheet to cool. If using, add the Almonds (1/2 cup) or Almond Butter (1/2 cup) before portioning into cookies.

These keep at room temperature in a sealed container for 4-5 days. They also freeze perfectly in a well-sealed container for at least 1 month.

Author's Notes

Make them Paleo; use 2 cups Finely Shredded Coconut and 1 cup Big Flake Coconut instead of the rolled oats.
