Cooking Instructions
1.
Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
2.
Peel the Potatoes (2 lb) and cut them into small pieces. Place the pieces in a large bowl.
3.
Use a mortar or a kitchen mallet to roughly crush the Whole Coriander Seeds (1 Tbsp). Add the Olive Oil (4 Tbsp) and coriander seeds to the potatoes and toss to coat.
4.
Season with Kosher Salt (to taste) and Freshly Ground Black Pepper (to taste) and toss again. Spread the coated potatoes out on the prepared baking sheet.
5.
Place in oven and roast for 30 minutes.
6.
Remove from oven, transfer to a bowl or serving platter. Toss with the Fresh Cilantro Leaves (1 cup) and serve immediately.
