This Avocado Ranch Chicken Casserole is a one-pan dream meal! The avocado ranch dressing gives it so much flavor with lots of rice and mushrooms.

Cooking Instructions

Preheat the oven to 350 degrees F (180 degrees C).

Place the Boneless, Skinless Chicken Breasts (4) in a 9x13-inch casserole dish and season it generously with the Salt (3 pinches), Ground Black Pepper (3 pinches), and Garlic Powder (3 pinches).

Evenly distribute the Cremini Mushrooms (2 1/4 cups) and Long Grain White Rice (1 cup) over and around the chicken, then pour in the Avocado Ranch Dressing (3 cups) and Chicken Stock (1 cup). Finally, sprinkle the Parmesan Cheese (4 Tbsp) evenly on top.

Bake the casserole for 1 hour, taking it out and stirring the rice every so often.

When the casserole is done, place the Avocados (to taste) on top and serve immediately!

Serves 4 really hungry people, otherwise, it can be stretched to 6 servings easily.
