Fresh Prickly Pear Margaritas

For the prickly pear syrup, scoop the flesh out of the Prickly Pears (2) and roughly chop it. Combine it with the Water (1 1/2 cups) and Granulated Sugar (1/2 cup) in a saucepan. Bring to a boil, then reduce to a simmer and cook for 10-15 minutes. Strain out solids.

To salt the glasses, prepare one plate with a bit of water, and another plate with a handful of Salt (to taste) . Dip the glass in water plate, then dip the glass on the salt plate.

Slice 1/4 inch off of each end of the Lime (1) and cut it in half, lengthwise. Set one of the halves cut side-down​​ on the cutting board, slice it at an angle, lengthwise to make lime wedges and set aside.

For each drink, combine 1 oz of the prickly pear syrup, plus the juice from Limes (1 1/2) , Tequila (2 fl oz) , Orange (1/4) and Cointreau (0.5 fl oz) in a cocktail shaker. Add a scoop of Ice (1 handful) and shake for 10 seconds. Serve over ice with extra Lime Wedge and Fresh Mint (1 sprig) .
