Cooking Instructions
1.
Preheat oven to 400 degrees F (200 degrees C).
2.
Drizzle the Winter Squash (1/2) with Olive Oil (as needed), Salt (to taste), and Ground Black Pepper (to taste) and roast in the oven till fork-tender, about 10-15 minutes.
3.
Tear the Beet Greens (to taste), Fresh Spinach (to taste), Microgreens (to taste), and Kale (to taste) and combine.
4.
Dice up Pear (1) and Apple (1/2).
5.
Combine roasted squash with diced apples and diced pears.
6.
Drizzle with oil and vinegar and serve.
