If you a looking for an easy yet super yummy vegan pie for this holiday season, well you have to try this recipe! The crust is made with light oil, vegan flax eggs and barley flour! The filling is a creamy chocolate custard with caramelized pears. Makes a 20cm pie.

Extra-Virgin Olive Oil
or Vegetable Oil
or Regular Eggs
Preheat oven to 355 degrees F (180 degrees C).
In the bowl of your electric mixer, use the whisk attachment to beat up
Extra-Virgin Olive Oil (1/3 cup)
Brown Sugar (1/2 cup)
Flaxseed Meal (2 Tbsp)
mixed with 5 Tbsp water.
Barley Flour (1 cup)
Cake Flour (1 cup)
Baking Powder (1 tsp)
Vanilla Extract (1/4 tsp)
, and mix everything together using the paddle attachment of a wooden spoon
Roll out dough into a circle and lay it in a pie pan.
Peal and slice up the
. Place the slices in a skillet with
Granulated Sugar (2 Tbsp)
Water (3 Tbsp)
and cook on medium-high until it lightly caramelizes.
In a saucepan, heat up
Dark Chocolate (1 cup)
Brown Sugar (3 Tbsp)
Rice Flour (1/4 cup)
. Stir constantly until a paste forms
Slowly pour in the
Almond Milk (1 cup)
and cook on low heat, stirring until it turns into a smooth cream.
Pour the chocolate cream into the pie crust,
Lay the pears on top and bake in the preheated oven for 45 minutes.
Remove from the oven and let your pie cool down. Sprinkle the top with some powder sugar if you want, and serve!
