Cheddar Herb Popovers

I've made this recipe at least 5 times and I don't see myself stopping. Did you know that you don't need a special popover pan to make popovers? I certainly did.

Milk

Eggland's Best Classic Eggs

•

1 cup

All-Purpose Flour

•

2 Tbsp

Unsalted Butter

•

1/2 tsp

Salt

1/8 tsp

Ground Black Pepper

Grated Cheddar Cheese

1 1/2 Tbsp

Dried Thyme

•

1/2 tsp

Dried Oregano

Cooking Instructions

Melt the Unsalted Butter (1 Tbsp) and whisk half of it into the All-Purpose Flour (1 cup) , Eggland's Best Classic Eggs (2) , Salt (1/2 tsp) , Ground Black Pepper (1/8 tsp) , and Milk (1 cup) .

Stir in Cheddar Cheese (1/3 cup) , Dried Oregano (1/2 tsp) and Dried Thyme (1 1/2 Tbsp) . Let the batter rest for an hour.

Preheat the oven to 425 degrees F (220 degrees C). Put the rack in the upper third of the oven.

Butter a standard size muffin tin, or use two mini-muffin tins with the remaining Unsalted Butter (1 Tbsp) and put in the oven until it sizzles.

Stir the batter and divide between muffin cups. You may add a 1/2 tsp of Just Jan’s® Apricot Fruit Spread (to taste) to the batter in each cup.

Bake for 18 to 20 minutes until they are puffed and golden brown. It’s best to serve them immediately.
