Strawberry Arugula Salad Recipe with Basil and Mint
A perfect summer salad idea. Use the herbs like lettuce, and the macerated strawberries actually create the dressing. Ready in less than 15 minutes!

, juiced, zested

Olive Oil

Cooking Instructions
1.
Hull and slice Fresh Strawberry (8 ounce) and place them in a bowl.

Add the zest, 2 Tbsp of juice from the Lemon (1), and Honey (1 tablespoon). Stir to combine and allow to macerate for 10 minutes, or until the juices are running from the strawberries.

Place Arugula (4 ounce) in a large bowl. Tear the Fresh Basil (1 cup) and Fresh Mint (1/2 cup) into smaller pieces (small leaves can remain whole). Toss herbs and arugula gently together with your hands.
4.
Top the salad mixture with the strawberries, making sure to drizzle all of the juices over the greens. Drizzle the salad with some good quality Olive Oil (2 tablespoon), season with a pinch of Sea Salt (to taste) and serve.
