Cooking Instructions
1.
Preheat your oven to 325 degrees F (160 degrees C). Season the Veal Shanks (4 lb) with Kosher Salt (to taste), Sriracha (to taste), and Granulated Garlic (to taste).
2.
Roast at 325 degrees F (160 degrees C) for 4 hours, baste every 20 minutes with Beer (to taste) of your choice.
3.
Deglaze the roasting dish/pan with Red Wine (to taste), strain the jus, check and adjust the flavor.
4.
In a separate pan saute Bacon (4 oz) in Garlic & Herb Butter (1/4 cup).
5.
Once the bacon is crisp, add Brussels Sprouts (2 1/2 cups), saute until heated through, check and adjust seasonings.
6.
Carve the veal shank and serve with Brussels sprouts.
