A classic Canadian dish that's easy to make and is sure to be a crowd-pleaser, but instead of the usual cheese curds which can be hard to find in the US, I used delicious, melty mozzarella cheese!

Cooking Instructions
1.
Peel your Potatoes (5) and cut into fries.
2.
Place your cut fries into a bowl of cold water to blanch and remove some of the starch and prevent it from browning.
3.
Set your deep fryer to 325 degrees F (160 degrees C).
4.
Remove your cut fries from the cold water and dry them well on a towel, then set them aside. Once your oil is ready, deep fry fries for 2 minutes, then remove from the oil back to the towel.
5.
Raise the temperature of your oil to 375 degrees F (190 degrees C). Blot the oil from the fries then deep fry again for 3-4 minutes, or to your liking. If you are pan-frying, just fry them again.
6.
Plate the fries and sprinkle the Shredded Mozzarella Cheese (2 2/3 cups) on top. Pour the hot Gravy (to taste) over the top and serve.
