Vegetable Casserole

Another great variation for the famous green bean, perfect for Thanksgiving or Christmas. This casserole has the crunch of corn and water chestnuts, along with sour cream, cream soup, cheese, and cracker crumbs. It is one of those recipes that makes you want to go back for more than one helping.

Canned French Style Green Beans , drained

or Frozen French Cut Green Beans

2 2/3 cups

Canned Corn

or Frozen Corn

•

1 3/4 cups

Water Chestnuts

Small White Onion , chopped

•

1 cup

Sour Cream

•

10.5 oz

Cream of Chicken Soup

or Cream of Mushroom Soup or Cream of Celery Soup

1 stick

Unsalted Butter , melted

•

1 1/2 cups

Grated Monterey Jack Cheese

•

1 1/2 cups

Crushed Crackers

Cooking Instructions

Preheat oven to 400 degrees F (200 degrees C).

In a 9-inch casserole pan, layer the Canned French Style Green Beans (4 cups) , Canned Corn (2 2/3 cups) , Water Chestnuts (1 3/4 cups) , and White Onion (1) .

In a small bowl, mix together Sour Cream (1 cup) and Cream of Chicken Soup (1 cup) . Spread mixture over casserole.

Top casserole with Monterey Jack Cheese (1 1/2 cups) , Crackers (1 1/2 cups) , and Unsalted Butter (1 stick) .

Cover with foil and bake for 50 minutes (if using canned vegetables cook 30 - 40 minutes). Remove the tin foil for the last ten minutes and cook until lightly browned and bubbling.
