This fondue is especially luxurious and rich when prepared with the one-year old Reypenaer. You can make it as simple or elaborate as you wish. Serve it with chunks of farmhouse bread, or all kinds of small dishes so that your guests can decide what they want to dip.

Cooking Instructions
1.
Grate 12 Month Reypenaer Gouda (2 cups) and mix with All-Purpose Flour (1 Tbsp) in a bowl.
2.
Cut the Garlic (1 clove) in half. Rub 1/2 of garlic over inside of fondue pot. Mince the other 1/2 clove up finely and add to pot.
3.
Add Chardonnay (3/4 cup) to the pot and heat slowly, just until the liquid begins to bubble.
4.
Slowly add the cheese mixture, whisking as it melts.
5.
When smooth, stir in the Apple Juice (1 Tbsp) and let cook until reduced slightly.
6.
While the fondue is cooking over low heat, dice the French Bread (1 loaf) and slice the Granny Smith Apples (2).
7.
Serve immediately with bread, apples, and Crudites (to taste) if desired.
