Ground Black Pepper
Shaved Parmesan Cheese
Olive Oil (1/4 cup)
in a cast-iron skillet over medium-high heat. Add
Garlic (4 cloves)
and cook, stirring frequently, for 3 minutes.
White Mushrooms (2 1/3 cups)
Yellow Squash (1)
Cherry Tomatoes (2 cups)
Salt (1/2 tsp)
Ground Black Pepper (1/2 tsp)
to the skillet and stir so veggies are well-coated.
Preheat your oven’s broiler (optional).
Cook for 5 minutes, stirring occasionally until vegetables are tender. Sprinkle
Shaved Parmesan Cheese (2/3 cup)
over top of the vegetables.
Option 1: Cover skillet (don’t remove from heat) and allow the cheese to melt for 1-2 minutes. Option 2: Place cast iron skillet in the oven and broil for 1 minute, or until cheese is melted.
