Spinach Tagliatelle with Crayfish in Garlic-Chili Butter

, drained, cooked
Cooking Instructions
1.
Remove the tails from the shells of Crawfish (1 lb), and reserve 5 whole crayfish for garnish.
2.
Simmer the shells and legs in Water (4 cups), 1/2 tsp Garlic Paste (1 tsp) and Sweet Chili Paste (1 tsp) until reduced to 1/2 cup.
3.
Add Butter (3/4 cup), and simmer until liquid has evaporated.
4.
Strain the butter into another pot.
5.
Add the whole crayfish and the tails to warm.
6.
Add 1 Tagliatelle (4 oz) together with Water (4 Tbsp), mix well, and check/adjust seasoning.
7.
Serve and enjoy!
