Cooking Instructions
1.
For the peanut sauce, simply add Peanut Butter (4 Tbsp), Spicy Sesame Oil (2 Tbsp), the juice of 1/2 of a Lime (1/2), Water (2 Tbsp), Tamari Soy Sauce (2 Tbsp), Fresh Ginger (1 in), Garlic (2 cloves), and Sambal (1 Tbsp) into a jar and shake till well combined. You may need to use a fork to stir to smoothen the peanut butter. Set into the fridge.
2.
For the ground round mix, another easy one, just add Veggie Ground Round (1 pckg), Fresh Ginger (2 in), Fresh Mint (4 Tbsp), Fresh Basil (4 Tbsp), Tamari Soy Sauce (3 Tbsp), the juice of a Lime (1), Crushed Red Pepper Flakes (1 tsp),
3.
Continue to add Black Garlic (1 tsp), Simply Organic Onion Powder (1 tsp), Paprika (1 tsp), Cayenne Pepper (1/4 tsp), Salt (to taste), and Ground Black Pepper (to taste) into a large bowl and stir till well combined. Set aside for 30 minutes before serving.
4.
Prep your veggies and create an assembly line on your countertop. Start with your Collard Greens (to taste), and choice of Carrot (1), Mango (1), Red Cabbage (1 cup), or Red Bell Pepper (1).
5.
Once you've added your vegetables, add the ground round mixture, and top with sauce. Alternatively, you can place your vegetables, sauce, and ground mixture on the table and assemble there, just depends on how many you think you and your family will be having.
Author's Notes
Store veggies and collards in a damp container for longer-lasting crispness!
If you do not have ground round then use a cook french lentil and pulsed walnut mixture. A 1:1 ratio will work perfectly!
