Preheat oven to 425 degrees F (220 degrees C).

Combine Ricotta Cheese (2 cups), Garlic (3 cloves), Fresh Thyme (3 Tbsp), Lemon (1), Freshly Ground Black Pepper (to taste), Kosher Salt (1 tsp), Extra-Virgin Olive Oil (4 Tbsp), Parmesan Cheese (4 Tbsp) and Crushed Red Pepper Flakes (to taste). Mix until well combined.

Spoon into 1 large (about the size of a 9-inch oven-safe skillet) or several small gratin dishes.

Bake for 10 to 15 minutes or until bubbling and just slightly golden.

Let cool briefly. Serve with Bread (to taste).
