I’ve been playing around with this strawberry chocolate muffins recipe for a bit. Strawberries can be tricky because they can make the muffins too moist. But I finally figured it out!

Banana Bread Mix

Eggland's Best Classic Eggs
, separated
•

Large
Bananas
, overripe
•
4
Tbsp
Chia Seeds
•

Fresh Strawberries
•
to taste
Chocolate Syrup
or Dark Chocolate Syrup
Cooking Instructions
1.
Preheat oven to 350 degrees F (180 degrees C) and grease a muffin pan.
2.
Mash Bananas (2) then add in whites of the Eggland's Best Classic Eggs (3) and water. Whip together.
3.
Slowly add in Banana Bread Mix (1). Then add in Chia Seeds (4 Tbsp). Fold In Fresh Strawberries (10).
4.
Fill each muffin cup 3/4 of the way. Place in the oven and bake for 22-27 minutes or until golden brown around the edges.
5.
Let cool and drizzle with Chocolate Syrup (to taste). Garnish with additional strawberries if desired. Enjoy!
