Chocolate Snowball Cookies

These cookies are not very sweet and are so easy to make especially when you have kids who like to hang around, help and enjoy making them with you. They are extra yummy due to the cocoa fragrance and added crunch from the walnuts.

All-Purpose Flour

•

2 Tbsp

Corn Flour

•

1/2 tsp

Vanilla Powder

•

1/2 cup

Almond Meal

•

1/3 cup

Unsweetened Cocoa Powder

4 oz

Butter , softened

•

3/4 cup

Powdered Confectioners Sugar

•

Eggland's Best Classic Egg , separated

•

1/3 cup

Walnuts

Cooking Instructions

In a mixing bowl, stir Butter (4 oz) to light. Add Powdered Confectioners Sugar (3/4 cup) and mix well. Add Eggland's Best Classic Egg (1) Yolk and mix well again.

Sieve in All-Purpose Flour (1 cup) , Corn Flour (2 Tbsp) , Vanilla Powder (1/2 tsp) and Unsweetened Cocoa Powder (1/3 cup) , add Almond Meal (1/2 cup) , fold well with a rubber spatula.

Lastly add in Walnuts (1/3 cup) and mix well to form a soft dough.

Roll the dough into small balls - put on plastic gloves, about 10-12 gram each and place on a lined baking tray.

Bake in preheated oven at 340 degrees F (170 degrees C) for about 20 minutes.

Cool down the cookies completely and dust some icing sugar over them.
