Funfetti is a trend thats buzzing around everywhere at the moment. It basically means adding sprinkles to whatever your baking. We've seen funfetti cakes, cookies, ice-cream, macaroons and even waffles. We decided to get the sprinkles out and add them to American pancakes.

Cooking Instructions
1.
In a small bowl, combine Powdered Confectioners Sugar (1 cup), Cream Cheese (1/2 cup), and Milk (1 cup). Stir until creamy, adding an additional tablespoon of milk, if needed. Set aside, this will be your glaze for later.

In a medium bowl, combine All-Purpose Flour (1 cup), Granulated Sugar (2 Tbsp), Baking Powder (2 tsp), and Salt (1 tsp). Mix well.

In a large bowl, combine Milk (1 Tbsp), Eggland's Best Classic Egg (1), Butter (2 Tbsp), and Almond Extract (1/2 tsp). Using a mixer or spoon, mix wet ingredients until creamy.

Gradually add the flour mixture to the wet ingredients, stirring until batter is free of lumps.
5.
Place a skillet over medium heat and spray with cooking spray. Slice the Fresh Strawberries (1 cup).
6.
When the skillet is hot, add batter in 1/4 cup batches. Add Sprinkles (to taste) and sliced strawberry to each pancake before flipping, about 3 minutes on one side then flip.
7.
Cook other side for another 3 minutes. Then remove from heat, repeating the process until batter is gone. (Spray skillet with cooking spray before each new batch.)
8.
Heat the glaze in the microwave for 10-second intervals, stirring after each, until smooth. Pour over pancakes and top with extra strawberry and sprinkles.
