Cooking Instructions
1.
Combine the Fresh Mint Leaves (1 cup), Unsalted Pistachios (4 Tbsp), and Garlic (1 clove) in a food processor. Process until ground, then pour the Olive Oil (4 Tbsp) in a steady stream until desired consistency achieved.

Scrape out pesto into a bowl and fold in Feta Cheese (1/3 cup). Add pinch of Sea Salt (to taste) tasting and adjusting as needed. If desired, a squeeze of Limes (to taste) is delicious.
3.
Transfer to an airtight container and serve.
Author's Notes
I highly recommend serving this with lamb. Roasts, chops, meatballs - it's all delicious.
