Chop the Bok Choy (to taste) and Scallions (1 bunch). Set the bok choy aside.
2.
Combine Ground Pork (8 oz), Eggland's Best Classic Egg (1), chopped scallions, Soy Sauce (1 Tbsp), Ground Black Pepper (to taste) and Fresh Ginger (to taste).
3.
Place 3/4 of a teaspoon of filling in the center of one of the Wonton Wrappers (35).
4.
Seal using Milk (to taste) or beaten egg around the edges and make sure to press out any air.
5.
Then wrap the wonton. Continue with the remainder of wrappers.
6.
Once all wontons are ready, combine Vegetable Stock (32 fl oz), Chicken Stock (32 fl oz), and Celery (2 stalks) in a large pot and let it come up to a full boil.
7.
Place wontons in one at a time stirring so they do not stick to each other. Add bok choy leaves. Reduce heat to medium and cook for 15 minutes.
8.
Place cooked wontons in a bowl and serve with the broth. Enjoy!
Author's Notes
Wontons can be made ahead of time! Just freeze them on a baking sheet after assembling, then store in a plastic ziplock bag in the freezer once frozen. Cook by simply boiling the wontons straight from the freezer.
