Cooking Instructions
1.
Soak uncooked Vermicelli Noodles (3.5 oz) in room-temperature water for 30 minutes.

While waiting for the noodles to soak, marinate the Jumbo Shrimp (10) in Sesame Oil (1 Tbsp), Salt (1 tsp), Chicken Stock Granules (1 tsp), and Ground White Pepper (1 dash). Allow the shrimp to marinate for 30 minutes.

Drain the noodles then pat them dry with a paper towel.

Wrap each shrimp in 7 to 8 strands (pinch a small amount) of vermicelli noodles.

Heat enough Cooking Oil (as needed) in a wok over medium-high heat to deep-fry the shrimp. Deep-fry about 2 shrimp at a time to avoid overcooking them. Fry them until they are golden brown, which takes less than a minute.
6.
Place the fried shrimp on paper towels or on a cooling rack over a cookie sheet.
7.
Serve immediately with Sweet Chili Sauce (to taste) on the side.
Author's Notes
Pat the shrimp dry before marinating them. Water tends to get trapped in the shrimp tails and may cause the hot oil to spatter when you deep-fry it. You can use shrimp without a tail.
To make sure the oil is hot enough, test by deep-frying a few strands of any leftover vermicelli noodle. The noodle should puff up almost immediately.
If the noodles are too sticky to handle, toss them in a little sesame oil.
Store any leftover shrimp in an airtight container in the fridge. It will keep for about 3–4 days, and re-heat the shrimp in a toaster oven for 1-2 minutes, or in the oven at 350 degrees F (180 degrees C) for 10 minutes.
