Creamy Red Lentil Curry

Creamy Red Lentil Curry is a Vegan-friendly, Dairy Free and Gluten Free main dish, perfect for Meat Free Monday. Onion and garlic are combined with red lentils and a variety of spices along with tomato and coconut milk. Simmered gently, this creamy curry is great served over rice, with mixed vegetables or just by itself.

Vegetable Oil

Yellow Onion , diced, peeled

4 cloves

Garlic , minced

1 tsp

Dijon Mustard

or Mild Mustard

Ground Turmeric

Ground Coriander

Ground Cumin

Mild Curry Powder

Tomato Paste

1 can
(400 mL)

Coconut Cream

•

1 cup

Lentils

•

to taste

Fresh Mint

•

3 cups

Water , boiled

Cooking Instructions

Place a little bit of Vegetable Oil (1 tsp) in a large, deep pan over low to medium heat. Add in Yellow Onion (1) . Stir occasionally for about 5 minutes.

Add in the Garlic (4 cloves) . Stir for a few minutes, until aromatic.

Add in Dijon Mustard (1 tsp) , Ground Turmeric (1 tsp) , Ground Coriander (1/2 tsp) , Mild Curry Powder (1 tsp) , Ground Cumin (1 tsp) , and Salt (to taste) . Stir around for about a minute.

Add Tomato Paste (2/3 cup) , Coconut Cream (1 can) , and rinsed Lentils (1 cup) . Add boiling Water (3 cups) .

Stir mixture and bring to a boil.

Once boiling, reduce heat to lowest setting. Place top on the pot and allow to simmer for 45 minutes.

Switch off heat and give the curry a stir. Garnish with Fresh Mint (to taste) . Enjoy!
