Medium Sweet Potato

•

1 cup

Almond Milk

or Nut-Free Milk for a Nut-Free Mac and "Cheese"

4 Tbsp

Nutritional Yeast

•

1 tsp

Pink Himalayan Sea Salt

•

1 tsp

Liquid Aminos

or Soy Sauce

•

Lemon , freshly squeezed

•

1/4 tsp

Mustard Seeds

or Mustard

•

1 tsp

Simply Organic Onion Powder

•

1/2 tsp

Chili Powder

•

1 clove

Small Garlic

•

1 pckg

Cooking Instructions

Chop the Sweet Potato (1) into medium sized pieces. Bring a large pot of water to boil and cook Pasta (1 pckg) .

Bring a medium pot of water to boil, insert steaming basket, and add chopped sweet potatoes. Cover and reduce the heat to medium-low. Let steam for 10 minutes or until tender.

Add Almond Milk (1 cup) , Nutritional Yeast (4 Tbsp) , Pink Himalayan Sea Salt (1 tsp) , Liquid Aminos (1 tsp) , juice from Lemon (1) , Mustard Seeds (1/4 tsp) , Simply Organic Onion Powder (1 tsp) , Chili Powder (1/2 tsp) , and a Garlic (1 clove) into a blender. Blend on high until the mixture is smooth.

When the sweet potatoes are done steaming, add them to the blender as well and mix on high again for about a minute or so. Add water as needed to achieve the desired viscosity.

Stir in as little or as much sauce as wanted to the cooked pasta and enjoy.
