Sponge Cake (2)
into four pieces. Spread a generous portion of
Strawberry Jam (1 cup)
onto each one. Place the top of the sponge cake on top and use a sharp knife to cut them into squares. Set aside
Make the chocolate icing: Sift
Powdered Confectioners Sugar (3 cups)
Unsweetened Cocoa Powder (2 Tbsp)
into a large mixing bowl. Add
Vanilla Extract (1 tsp)
Water (as needed)
and mix everything together.
Use a fork to pick up one cake and get it coated with the chocolate icing, and drip of the excess. Then place it into the
Unsweetened Shredded Coconut (2 cups)
and cover it with coconut. Place the cake on a rack. Continue with the rest. Serve and enjoy!
