Wash Kale (2 bunches) and rip away from stems into bite-sized pieces, then chop them finely. After, combine it with Beets (2 cups), Pepitas (1/3 cup), and Medjool Dates (6) in a large bowl.

Whisk 1/2 cup Lemon Juice (1), Extra-Virgin Olive Oil (1/2 cup)Sea Salt (1/2 tsp), and Honey (2 Tbsp) together. Pour over the top of the salad and enjoy!
