Cooking Instructions
1.
Melt Butter (2 Tbsp) in a large saucepan over medium heat. Add Onions (1/2 cup) and Garlic (3 cloves), sauté for 5 minutes or until tender, stirring frequently.

Add Cooked Shrimp (1 lb) and cook for 2 more minutes, stirring frequently. Remove the mixture from the pan, cover and keep warm.
3.
Add Shredded Cheddar Cheese (4 cups) and Diced Tomatoes with Green Chilies (1 can) to the pan. Cook over medium-low heat for 5 minutes or until the cheese thoroughly melts.
4.
Stir in the shrimp mixture along with the Scallions (1/2 cup).
5.
Garnish with green onion strips. Serve with Tortilla Chips (to taste) and, if desired, Mixed Vegetables (to taste).
