My Best Sweet Corn Pancakes for Pancake Day are sweet, savoury, soft and super healthy. With only a handful of ingredients and ready in less than 20 minutes, these pancakes are always a hit with kids, adults, fussy eaters and gluten free dieters! Plus they only have a couple of tablespoons of all purpose or gluten free flour so technically I can say they are flour-less.

Cooking Instructions

In a food processor, add Corn (2 cups), Milk (1 cup), Granulated Sugar (1 tsp), and Olive Oil (1 tsp). Beat in medium until smooth. Then add All-Purpose Flour (1 tsp) and beat in medium untill well incorporated.

In a pan with a dash of oil, pour two teaspoonful of mixture at a time. Cook until brown for both sides. Keep on doing with the rest. Serve and enjoy!
