Step 1
Preheat the oven to 375 degrees F (190 degrees C).
Step 2
Spread the
Boneless, Skinless Chicken Thighs (680 g)
out in the bottom of a 9x13" baking dish. Drizzle with
Olive Oil (15 mL)

Step 3
Spread the
Fresh Baby Spinach (90 g)
over the top of the chicken.
Step 4
In a bowl, combine the
Artichoke Hearts (1)

Tomatoes (2)

Red Onion (1)
,
Kalamata Olives (45 g)
,
Greek Seasoning (4 g)
, and
Olive Oil (30 mL)
. Stir gently until mixed well.
Step 5
Spread the contents of the bowl including all the juices left in the bowl on the top of the spinach. Sprinkle with the
Crumbled Feta Cheese (20 g)
.
Step 6
Bake in the oven for 40 minutes.
Step 7
Serve this over rice but you can serve it over potatoes, quinoa, couscous or even orzo. Enjoy!
