Step 1
Start heating the Neutral Oil (as needed) in a large pan to 320 degrees F (160 degrees C). You want the oil about 1 1/2-inches deep.
Step 2
Slice the Delicata Squash (2) in rings about 1/4 inch thick. Remove the seeds and loose fiber.
Step 3
Place 1 cup of the All-Purpose Flour (125 g) in a bowl. Dredge the rings in the flour.
Step 4
Combine the remaining All-Purpose Flour (95 g) , Rice Flour (70 g) , Salt (9 g) , Baking Soda (2 g) , Onion Powder (2 g) . and McCormick® Garlic Powder (2 g) in a large bowl. Add the Ale Beer (240 mL) and GREY GOOSE® Vodka (120 mL) to the flour mixture and whisk just until you have a smooth wet batter.
Step 5
Place the flour-coated squash rings, a few at a time, in the bowl with the batter. Tap off the excess batter and using a skewer or chopstick, place the battered ring in the pan with the preheated oil.
Step 6
Fry the rings until golden, about 1 to 1 1/2 minutes on each side. Remove and drain on a rack or a paper towel-lined plate.
Step 7
When you’re done frying all the rings, drop some Fresh Rosemary (to taste) in the oil for about a minute on each side until it just starts to slightly brown. Remove the rosemary.
Step 8
Sprinkle the fried rosemary and Sea Salt Flakes (to taste) over the rings. Serve immediately with your favorite dipping sauce.
