Step 1
First, whisk the All-Purpose Flour (220 g) , Caster Sugar (20 g) , Baking Powder (10 g) , Baking Soda (9 g) , Ground Cinnamon (5 g) , and Ground Nutmeg (1 g) together in a large mixing bowl.
Step 2
In another bowl, whisk the Butter (120 g) , Milk (240 mL) , Eggs (2) , and Vanilla Extract (2 mL) together.
Step 3
Pour those wet ingredients into the dry ingredients and whisk them together until it becomes a thick, smooth batter. Switch to a spatula and fold in the Carrots (4) , Walnuts (30 g) , Raisins (35 g) , and Unsweetened Shredded Coconut (25 g) .
Step 4
Get out your waffle maker and preheat it it. Spray it well with cooking spray.
Step 5
Scoop 1/4 of the batter into the waffle maker and spread it out evenly to thinly cover the whole bottom half. Close it and cook the batter for about 4-5 minutes.
Step 6
While it cooks, make the topping. Combine the Cream Cheese (225 g) , Milk (15 mL) , Powdered Confectioners Sugar (7 g) , and the rest of the Ground Cinnamon (as needed) together in a bowl and whip them all together with a hand mixer.
Step 7
Plate the finished waffle with a big scoop of the topping and serve. Repeat with the remaining batter to make 4 waffles total, serving them as you make them. Enjoy!!
