Step 1
Preheat the oven to 400 degrees F (200 degrees C).
Step 2
Spray a 12 well muffin tin generously with the
Coconut Oil Cooking Spray (as needed)
. Soak the
Old Fashioned Rolled Oats (180 g)
in the
Apple Cider (480 mL)
in a large mixing bowl for 10 minutes to soften them and let them absorb the flavor.
Step 3
Add in the
Apple Sauce (280 g)
,
Dark Brown Sugar (15 g)
,
Baking Powder (7 g)
,
Baking Soda (5 g)
,
Ground Cinnamon (5 g)
,
Salt (3 g)
and
Ground Nutmeg (1 g)
. Stir it all together well.
Step 4
Stir in the
All-Purpose Flour (250 g)
just until it disappears. Don't overwork it. Fill each muffin well pretty much to the top, then sprinkle a handful of the
Vegan Caramel Chips (to taste)
on top and press them into the batter so they stick.
Step 5
Bake the muffins until golden brown and baked through, about 20 minutes. Insert a toothpick into the center and check that it comes out clean.
Step 6
Let them cool for a bit in the tin, then carefully remove them to a cooling rack to finish cooling.
