Author's Notes

You can adjust the sauciness by adding a few additional tablespoons of barbecue sauce and water after baking.

Cooking Instructions

HIDE IMAGES
Step 1
Preheat oven to 325 degrees F (160 degrees C).
Step 2
Cut the Thick-Cut Bacon (2 slices) into a 1/2" dice.
Step 3
Place a dutch oven or heavy pot on medium high heat. Add the bacon and cook, stirring occasionally, until golden and crisp. Transfer the bacon to a paper towel to drain. Discard all but one tablespoon of the bacon grease.
Step 4
Heat the remaining bacon grease over medium high heat and add the Yellow Onion (1) , Green Bell Pepper (1) , and Garlic (1 clove) . Saute until slightly softened and translucent about 4 to 5 minutes.
Step 5
Remove from heat and add White Beans (2 cans) , Barbecue Sauce (240 mL) , Tomato Sauce (120 g) , yellow Yellow Mustard (15 g) and Water (60 mL) . Stir to combine.
Step 6
Place the lid on the pot and transfer the pot to the oven. Bake for 1 hour, check for consistency - according to your tastes. If you prefer thinner, more saucy beans, an hour should be enough time. If you like them thicker, cook longer.
Step 7
You can doctor it more to your tastes with a shake or two of Worcestershire Sauce (to taste) and/or Molasses (20 g) or maple syrup for additional sweetness. Serve.
