Cooking Instructions

Step 1
Whisk the Powdered Confectioners Sugar (190 g) and Almond Meal (125 g) together. Pour the mixture into a large bowl.
Step 2
Beat the Eggs (4) for 1-2 minutes or until they turn frothy.
Step 3
Add the Granulated Sugar (50 g) , Salt (2 g) , and the Almond Extract (20 mL) . Beat for 3-5 minutes or until medium shiny peaks.
Step 4
Fold almond mixture into the egg whites. Fold well with a spatula until the mixture has turned into a smooth mass with a consistency similar to that of honey.
Step 5
Transfer the mixture to a pastry bag then cut half an inch off the tip. Pipe one-inch rounds on a parchment-lined sheet. Let this dry for about 1 1/2 hours or until the tops have firmed up.
Step 6
Preheat the oven to 350 degrees F (180 degrees C).
Step 7
Bake sheets one at a time for around 15 minutes.
Step 8
Let this cool on the wire racks before you fill the cookies Fruit Jam (to taste) and put them together.
